La
Boucherie, literally
translated from French, means "The
Butcher Shop." The owners of La Boucherie are
proud descendants of the Hollier and Broussard families
from Abbeville,
Louisiana, located in the heart
of Acadiana, or what is frequently called "Cajun Country." Most
of La Boucherie's recipes
have been handed down for many generations, and our staff
hopes to share these culinary delights with you, your
family and friends. Let's eat, enjoy and laissez les
bon temps rouler (let the good times roll).

La
Boucherie is a federally inspected plant. Unlike many who
sell specialty
meats, everything is produced and assembled in our own kitchen
under federal supervision.
Morning Procedures:
Stuffings are cooked from scratch by our own progressive and
innovative chefs, mixed by hand with the cooked rice and cooled
to federal regulations.
Poultry is de-boned and the excess fat and skin removed by highly
skilled meat cutters and maintained at a temperature of 55 degrees
or colder.
Afternoon Procedures:
The assembly begins. The stuffings are integrated into the poultry,
seasoned, stitched, bagged, vacuum packed and flash frozen. This
frozen state is maintained until delivered to you. Our product
is never defrosted and re-frozen. It doesn’t get any better
than this.
